Broccoli, Peas, Red Pepper with Angel Hair Pasta

Okay - So I am italian. I will NEVER cut out pasta from my diet. But I will load it with veggies to make it more healthy and less high calorie. So I try to make the veggies the main dish with the pasta just mixed in. So I felt like pasta, so I opened up my fridge and when all else fails, grab whatever veggies you have on hand. So lets get started :) Keep in mind all ingredient measures are up to your discretion, so I leave them blank! Throw in whatever you want, get creative! Don't like peas, substitute zucchini!

Ingredients:
Broccoli
Red Pepper
Frozen Peas
Red Onion
Garlic
Angel Hair Pasta
1 tsp Olive Oil
Garlic, finely chopped

For Sauce:
3 oz. Goat Cheese
Pasta Water

Directions:
1. Bring a pot of water to boil and start boiling angel hair pasta.

2. In a skillet heat up the olive oil. When the oil is hot put in your red onion and peppers. Reduce to a medium-low heat. When the peppers and onions start to soften add in the broccoli and garlic. Stir everything together and cover to steam. Once the broccoli starts to soften add in the peas.

3. When the pasta is done boiling, take lid off of the pan full of veggies and add the pasta in the pan and reduce heat to a simmer.

4. Crumble up the goat cheese and stir together with a couple ladles of the pasta water. Cover and allow to simmer for 5 minutes.

5. When finished top with a few shavings of Parmesan cheese and fresh parsley if you'd like! and remember to enjoy! :)

I hope you enjoy the recipe! It was my first one for the blog so I hope it doesn't disappoint. I am going to start doing ones that actually have calories added to them. I will start calculating them for you!
